Fresh Eggs

I love fresh eggs, fortunately a former neighbor has chickens and I'm able to have an abundance of fresh farm eggs at all times.  There are times when the eggs are delivered and the lid on the carton can't be closed because of the large size of the eggs.  No white shells, just variations of browns and greens.  I'm no chicken authority so I have no idea what type of chickens she has but they do produce beautiful eggs with deep golden yellow yokes. The ones pictured are a deep copper colored shell although my camera, certainly not my photo ability doesn't do justice to the rich color of these shells. Unfortunately there were no green eggs in this delivery so all I have here are the various colors of copper and brown. These are just beautiful and hopefully there will be a double yoker in one of the shells.  Its amazing how an experience as small as finding a double yoker egg can bring on a smile.


One of the drawbacks to these over sized eggs is when a recipe for baking calls for eggs. The size of these eggs are in general larger than the 1X you can get in the store.  It can really mess up a recipe as I found out a few weeks ago when baking some blueberry muffins.  They tasted great but they didn't raise properly as there was too much egg in the mixture.  Who knew???????  I am now trying to make adjustments  when baking cakes and breads, its a process.

There's nothing like a fresh egg. I didn't really appreciate them when I was a kid and had them when I visited my grandmother, but now I do. I get them every once in a while from a friend and when I do, they are a real treat!

my grandma had chickens and I was an adult before I ever ate store bought eggs. I don't remember mom having trouble with baking though. I'll have to ask her.

I know what you mean about using eggs that are the wrong size in a recipe. Things just don't always come out right. Love the pic of the bowl full of brown eggs. I'd say the camera did just fine. LOL
As a kid, I always thought twin egg yolks were a prize!

Those are just beautiful Char! About the time I decided I was going to buy local fresh eggs, I couldn't find a seller! :( I have my eyes on the lookout for a "Fresh Eggs for sale" sign.

Yes, that would be a problem in recipes! I'm sure Martha could help you out...

Good morning. Thanks for your sweet comments. I probably trashed about 20 Pics trying to find clear ones. The ones taken in candlelight were extremely blurry because of the slow shutter time. I was lucky to get a few I could use.

We have a friend who brings us gorgeous eggs like these, too. They are always such a treat! I hope that you will share what you figure out about altering recipes to make the larger eggs work. When I was a child, we either had chickens or bought fresh eggs from a neighbor. I remember how pale the yolks of "store bought" eggs looked on the rare occasions we had to resort to using those.

Good point about extra large eggs spoiling certain recipes. I'd read that using small and medium eggs could cause problems. Makes sense too much can be as problematic as too little!

We were always told its a "lucky sign" to get a double yoke! I think you're just plain lucky to get such wonderfully fresh eggs like this from your former neighbor.
Your photo of the gathered into that old stoneware bowl is just picture-perfect! Reminds me of an old farmhouse scene.
